Green Guinness Float Cocktail Recipe Easy 3-Ingredient St. Patrick’s Day Drink

A creamy, slightly bitter Guinness stout combined with a refreshing mint ice cream or sorbet float, creating a festive and easy-to-make cocktail perfect for St. Patrick’s Day.

Ingredients

  • 12 oz (355 ml) Guinness Stout (preferably Guinness Draught)
  • 1 scoop (about ½ cup / 120 ml) mint ice cream or mint sorbet
  • 1 oz (30 ml) Crème de Menthe (optional)

Instructions

  1. Chill your glass in the fridge or freezer for 10-15 minutes to keep the Guinness frothy longer.
  2. Using an ice cream scoop, place one generous scoop (about ½ cup / 120 ml) of mint ice cream or sorbet into the chilled glass. Let soften if too hard.
  3. Pour 1 oz (30 ml) of Crème de Menthe gently over the scoop (optional).
  4. Slowly pour 12 oz (355 ml) of Guinness stout over the back of a spoon or down the side of the glass to preserve the creamy head.
  5. Allow the Guinness to bubble up around the float, creating a foamy, creamy crown.
  6. Serve immediately to enjoy the texture contrast between the cold creamy float and smooth stout.

Notes

Chill the glass beforehand to keep the float frothy longer. Pour Guinness slowly over a spoon or glass side to maintain the creamy head. Use firmer ice cream or sorbet to prevent the float from sinking too fast. Optional Crème de Menthe adds a minty kick but can be omitted or replaced with mint syrup for non-alcoholic versions. Serve immediately for best texture and flavor.
