A refreshing and calming iced tea featuring floral lavender and natural honey sweetness, perfect for summer afternoons.

Ingredients

Scale
  • 4 black or green tea bags
  • 2 teaspoons dried culinary lavender
  • 3 tablespoons raw honey
  • 2 tablespoons fresh lemon juice
  • 4 cups (1 liter) filtered water
  • Ice cubes

Instructions

  1. Boil 4 cups (1 liter) of filtered water in a medium saucepan for about 5 minutes.
  2. Remove from heat and add 4 tea bags and 2 teaspoons dried culinary lavender. Cover with a lid.
  3. Steep for 8 to 10 minutes to extract flavor without bitterness.
  4. Remove tea bags and strain the mixture through a fine mesh strainer into a heatproof pitcher to catch lavender buds.
  5. While tea is warm, stir in 3 tablespoons raw honey until dissolved. Rewarm gently if needed.
  6. Add 2 tablespoons fresh lemon juice and stir.
  7. Let tea cool to room temperature, then refrigerate for at least 1 hour.
  8. Serve over ice cubes, garnished with fresh lavender sprigs or lemon slices if desired.

Notes

Avoid over-steeping lavender to prevent bitterness. Use raw honey for best flavor. Fresh lemon juice is preferred over bottled. Can substitute honey with maple syrup or agave nectar for vegan option. Tea can be steeped overnight in fridge for milder flavor. Store refrigerated up to 3 days; flavors improve after resting overnight.
