A bright, citrusy, and floral mocktail combining fresh mandarin orange juice with jasmine tea and sparkling water, perfect for a refreshing summer drink.

Ingredients

  • 2 jasmine tea bags
  • 34 medium fresh mandarin oranges (about 3/4 cup or 6 fl oz freshly squeezed juice)
  • 12 tablespoons honey or agave syrup
  • 1 teaspoon fresh grated ginger
  • 1 cup (8 fl oz) sparkling water
  • Ice cubes
  • Mint leaves (optional, for garnish)

Instructions

  1. Boil 2 cups (16 fl oz) of water and pour over 2 jasmine tea bags in a heatproof pitcher. Let steep for 4-5 minutes until fragrant and golden, avoiding oversteeping to prevent bitterness.
  2. While the tea steeps, juice 3-4 medium mandarins to get about 3/4 cup (6 fl oz) of fresh juice. Strain through a fine mesh to remove seeds and pulp.
  3. Stir 1-2 tablespoons honey or agave syrup into the warm tea until dissolved. Add 1 teaspoon freshly grated ginger and let it infuse for 2 minutes. For milder ginger flavor, reduce to 1/2 teaspoon.
  4. Remove tea bags and ginger bits by straining the mixture again. Pour in the fresh mandarin juice and gently stir to combine.
  5. Fill serving glasses with ice cubes. Pour the tea and mandarin mixture halfway up, then top with 1 cup (8 fl oz) sparkling water. Stir gently to blend without flattening bubbles.
  6. Garnish with a sprig of fresh mint or a thin mandarin slice on the rim. Serve immediately.

Notes

Do not oversteep jasmine tea to avoid bitterness. Use fresh mandarin juice for best flavor. Sweeten while tea is warm to dissolve honey/agave properly. Grate fresh ginger for best taste. Add sparkling water just before serving to keep bubbles. Stir gently to preserve fizz. Chill tea beforehand for extra cold mocktail or add plenty of ice.
