A fresh, bright, and easy-to-make cocktail that captures the essence of spring with crisp cucumber, aromatic gin, and zesty lime. Perfect for garden parties, brunches, or relaxing on a warm afternoon.

  • 2 oz (60 ml) botanical gin (e.g., Bombay Sapphire or Tanqueray)
  • Half a medium cucumber, thinly sliced plus a few slices for garnish
  • 1 oz (30 ml) fresh lime juice
  • ยพ oz (22 ml) simple syrup (adjust sweetness to taste)
  • About 2 oz (60 ml) soda water to top off
  • A small handful of fresh mint leaves for muddling and garnish
  • Plenty of large ice cubes
  • Optional: rosemary sprig for garnish
  • Optional: edible flowers for garnish

Instructions

  1. Slice half a medium cucumber into thin rounds, reserving 2-3 slices for garnish. Rinse 6-8 fresh mint leaves.
  2. In a mixing glass, add cucumber slices and mint leaves. Gently muddle 3-4 times to release juices and oils without pulverizing.
  3. Add 2 oz gin and 1 oz fresh lime juice to the mixing glass.
  4. Pour in ยพ oz simple syrup and stir gently to combine.
  5. Fill the glass or shaker with large ice cubes and stir for 15-20 seconds to chill and slightly dilute.
  6. Pour the cocktail into a highball glass filled with fresh ice, straining if desired to remove cucumber bits.
  7. Top with about 2 oz soda water and stir gently to combine.
  8. Garnish with reserved cucumber slices, a sprig of mint, and optionally a rosemary sprig or edible flower.

Notes

Be gentle when muddling cucumber and mint to avoid bitterness. Use fresh lime juice for best flavor. Large ice cubes chill the drink without watering it down quickly. Chill glassware beforehand for extra refreshment. Adjust simple syrup sweetness to taste. For a low-alcohol version, replace half the gin with cucumber-infused tonic water.
