A classic cocktail with a silky twist, combining the tangy zing of fresh lemon juice with smooth Irish whiskey and a frothy egg white topping for a creamy texture and balanced flavor.

Ingredients

  • 2 oz Irish Whiskey (e.g., Jameson)
  • 3/4 oz fresh lemon juice
  • 1/2 oz simple syrup (equal parts sugar and water)
  • 1 large egg white
  • 2 dashes Angostura bitters (optional but recommended)
  • Ice

Instructions

  1. Measure 2 oz Irish whiskey, 3/4 oz fresh lemon juice, 1/2 oz simple syrup, and separate 1 large egg white.
  2. Add whiskey, lemon juice, simple syrup, and egg white to a cocktail shaker without ice. Seal and shake vigorously for about 15 seconds (dry shake) to create foam.
  3. Add 4-5 large ice cubes to the shaker and shake again for 20-30 seconds until the shaker feels cold and frosty (wet shake).
  4. Double strain the mixture into a chilled old-fashioned or coupe glass using the shakerโ€™s built-in strainer and a fine mesh strainer.
  5. Add 2 dashes of Angostura bitters on top of the foam and swirl with a toothpick or leave as is.
  6. Serve immediately and enjoy.

Notes

Use fresh lemon juice for best flavor. The dry shake (shaking without ice first) is essential to create the frothy egg white foam. If foam is insufficient, try shaking egg white alone first. Pasteurized egg whites or aquafaba can be used as alternatives to raw egg white. Keep glass chilled before serving for a fresher experience.
