A decadent cocktail dessert combining the fizz of champagne, the sweet tang of blackberries, and creamy vanilla ice cream. Perfect for parties or a treat-yourself night.

Ingredients

  • 1 bottle of champagne or sparkling wine (dry brut or extra brut)
  • Vanilla ice cream (dairy-free or vegan options available)
  • Fresh blackberries
  • Blackberry syrup (optional)
  • Mint leaves (optional)
  • Ice cubes

Instructions

  1. Chill the champagne in the fridge for 2-3 hours before serving or in the freezer for 30 minutes.
  2. Rinse the blackberries under cold water and pat them dry with a paper towel. Set a few aside for garnish.
  3. Optional: Drizzle a small amount of blackberry syrup into the bottom of each glass for added flavor and color.
  4. Place one or two scoops of vanilla ice cream into each glass.
  5. Slowly pour the chilled champagne over the ice cream, filling the glass about 3/4 full. Let the bubbles settle before adding more.
  6. Drop a handful of fresh blackberries into each glass.
  7. Garnish with a sprig of mint and a couple of whole blackberries.
  8. Serve immediately while the ice cream is still cold and the champagne is fizzing.
