Irresistible Cookie Butter Cold Brew

A creamy, spiced cold brew coffee drink blending cookie butter with cold brew coffee for a cozy, flavorful pick-me-up that’s quick and easy to make.

Ingredients

  • 1 cup (240 ml) cold brew coffee
  • 2 tablespoons cookie butter (smooth, creamy)
  • ยฝ cup (120 ml) milk or milk alternative (whole milk, oat milk, almond milk, or cashew milk)
  • ยฝ teaspoon vanilla extract
  • A pinch of ground cinnamon (optional)
  • Sweetener to taste (honey, maple syrup, or simple syrup, optional)
  • Ice cubes as needed

Instructions

  1. Measure 1 cup (240 ml) of cold brew coffee. If making homemade cold brew, steep coarsely ground coffee in cold water for 12-24 hours, then strain and chill.
  2. In a blender, combine 2 tablespoons of cookie butter and ยฝ cup (120 ml) of milk or milk alternative. Blend on medium speed for about 30 seconds until creamy and smooth. If no blender, warm cookie butter slightly and whisk vigorously with milk until mostly smooth.
  3. Add ยฝ teaspoon vanilla extract and a pinch of ground cinnamon. Blend or whisk briefly to combine.
  4. Slowly add the cold brew coffee to the cookie butter mixture. Stir gently to combine. Taste and add sweetener if desired, starting with 1 teaspoon.
  5. Fill a large glass or mason jar with ice cubes. Pour the cookie butter cold brew mixture over the ice and stir gently to chill evenly.
  6. Optionally, garnish with a sprinkle of cinnamon or a dollop of whipped cream.
  7. Serve immediately for best flavor and texture.

Notes

Warm cookie butter slightly before blending to avoid clumps. Adjust sweetener to taste as cookie butter is naturally sweet. Use oat or almond milk for dairy-free versions. Shake vigorously for a frothier texture. Store cookie butter mixture separately in fridge up to 3 days; cold brew up to 1 week.
