A velvety, spiced holiday drink that combines the creamy richness of eggnog with the warm flavors of gingerbread. Perfect for festive gatherings or cozy nights by the fire.

Ingredients

Scale
  • 2 cups whole milk
  • 1 cup heavy cream
  • 6 large eggs
  • 1/2 cup brown sugar
  • 2 tablespoons molasses
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground ginger
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • Pinch of cloves
  • Pinch of salt
  • Rum or bourbon (optional)

Instructions

  1. In a medium saucepan, combine milk and heavy cream. Heat over medium-low heat, stirring occasionally, until warm but not boiling. Remove from heat.
  2. In a mixing bowl, whisk together eggs and brown sugar until pale and slightly fluffy.
  3. Slowly pour about 1 cup of the warm milk mixture into the eggs, whisking constantly to temper the eggs and avoid scrambling.
  4. Return the tempered egg mixture to the saucepan with the remaining milk. Cook over low heat, stirring constantly, until the mixture thickens and coats the back of the spoon (about 8-10 minutes). Do not let it boil.
  5. Remove the saucepan from heat and stir in molasses, vanilla extract, ground ginger, ground cinnamon, ground nutmeg, and a pinch of cloves.
  6. Pour the eggnog through a fine mesh strainer into a large bowl to remove any lumps.
  7. Let the eggnog cool to room temperature, then refrigerate for at least 4 hours or overnight.
  8. Before serving, whisk the eggnog and add a splash of rum or bourbon if desired. Serve chilled in glasses and garnish with a sprinkle of cinnamon or nutmeg.

Notes

[‘Keep the heat low when cooking the egg mixture to prevent curdling.’, ‘If you donโ€™t have molasses, use dark brown sugar as a substitute.’, ‘Strain the eggnog twice for an ultra-smooth texture.’, ‘Prep the egg mixture ahead of time and store it in the fridge for convenience.’, ‘Serve chilled in festive glasses and garnish with whipped cream or cinnamon.’]
