  • 2 large eggs, room temperature
  • 1 tablespoon lemon zest, freshly grated
  • 3 tablespoons lemon juice, freshly squeezed
  • 1 teaspoon dried culinary lavender
  • 1 cup (90g) shredded coconut, unsweetened
  • ยฝ teaspoon baking powder
  • ยผ teaspoon salt
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat your oven to 350ยฐF (175ยฐC) and line an 8×8-inch baking pan with parchment paper.
  2. In a medium bowl, whisk together the flour, baking powder, salt, and lavender. Set aside.
  3. In a large bowl, use a mixer to cream the softened butter and granulated sugar until light and fluffy, about 2 minutes.
  4. Beat in the eggs one at a time, followed by the lemon juice and zest. Mix until fully incorporated.
  5. Gradually add the dry mix to the wet ingredients, beating just until combined. Fold in the shredded coconut with a spatula.
  6. Transfer the batter to the prepared pan, smoothing it out evenly.
  7. Bake in the preheated oven for 25โ€“30 minutes, or until the edges are lightly golden and a toothpick inserted in the center comes out clean.
