  • 1 cup fresh mint leaves
  • 1012 limes (about 1 cup or 240 ml of lime juice)
  • 2 cups (480 ml) white rum
  • 1 cup (240 ml) simple syrup
  • 4 cups (950 ml) soda water
  • Ice cubes
  • Optional garnish: lime wedges and extra mint sprigs

Instructions

  1. Gently rinse 1 cup of fresh mint leaves under cold water to remove any dirt. Pat them dry with a clean kitchen towel.
  2. Place the mint leaves in the bottom of your pitcher. Use a muddler or the back of a wooden spoon to lightly press the mint, releasing its aromatic oils.
  3. Squeeze 10-12 fresh limes to yield about 1 cup (240 ml) of juice. Add this to the pitcher over the muddled mint.
  4. Stir in 1 cup (240 ml) of simple syrup. Taste and adjust the sweetness as needed.
  5. Pour in 2 cups (480 ml) of white rum and mix well.
  6. Add 4 cups (950 ml) of soda water. Stir to combine the flavors evenly.
  7. Fill the pitcher with ice cubes, leaving some space at the top.
  8. Add lime slices and extra mint sprigs on top for presentation. Serve immediately in tall glasses, adding a sprig of mint and a slice of lime to each.
