A quick and easy frozen piña colada cocktail made with just three simple ingredients: frozen pineapple chunks, cream of coconut, and white rum. Perfect for a tropical escape in a glass.

  • 1 ½ cups (225 g) frozen pineapple chunks
  • ½ cup (120 ml) cream of coconut
  • 1 cup (240 ml) white rum
  • Optional: ½ cup (120 ml) ice cubes (if pineapple isn’t fully frozen)
  • Optional: 1 tablespoon (15 ml) fresh lime juice
  • Optional garnish: pineapple wedges or maraschino cherries

Instructions

  1. Measure out 1 ½ cups (225 g) of frozen pineapple chunks, ½ cup (120 ml) cream of coconut, and 1 cup (240 ml) white rum. Add ½ cup (120 ml) ice cubes if pineapple isn’t frozen solid.
  2. Place the frozen pineapple, cream of coconut, and rum into the blender pitcher. Add lime juice if using.
  3. Blend on low speed to break up chunks, then increase to high and blend for 45 seconds to 1 minute until smooth and slushy. Scrape down sides if needed.
  4. Check consistency; add more ice cubes and pulse if too thin, or add a splash of rum or coconut water if too thick.
  5. Taste and adjust sweetness if needed with simple syrup or honey.
  6. Serve immediately in chilled glasses, garnished with pineapple wedge, maraschino cherry, or paper umbrella.

Notes

Use frozen pineapple chunks for best texture. Cream of coconut is different from coconut milk and is sweeter and thicker. Chill glasses ahead for a frosty experience. Adjust rum amount to taste. Serve immediately to prevent melting. Leftovers can be frozen up to 24 hours and re-blended before serving.
