A refreshing and easy-to-make frozen rosé cocktail blending frozen rosé wine with fresh strawberries, simple syrup, and lemon juice for a perfect summer drink.

Ingredients

Scale
  • 750 ml rosé wine (dry or semi-dry)
  • 2 cups fresh strawberries, hulled and halved
  • 1/4 cup simple syrup (homemade or store-bought)
  • 2 tablespoons fresh lemon juice
  • 1 to 2 cups ice cubes
  • Optional garnish: fresh strawberry slices, lemon wheels, or mint sprigs

Instructions

  1. Freeze the rosé wine by pouring it into ice cube trays and placing them in the freezer for at least 6 hours or overnight.
  2. Wash, hull, and halve fresh strawberries. If using frozen strawberries, thaw slightly before blending.
  3. If making homemade simple syrup, combine equal parts sugar and water in a saucepan, heat until sugar dissolves, then cool completely.
  4. In a high-speed blender, combine about 2 cups of frozen rosé cubes, 2 cups of fresh strawberries, 1/4 cup simple syrup, 2 tablespoons fresh lemon juice, and 1 cup ice cubes. Blend on high until smooth and slushy, about 1-2 minutes, scraping down the sides as needed.
  5. Adjust texture by adding a splash of rosé or water if too thick, or more ice cubes if too thin. Taste and adjust sweetness or lemon juice as desired.
  6. Optionally strain the blended mixture through a fine mesh strainer for a smoother texture.
  7. Serve immediately in chilled wine glasses or tumblers, garnished with strawberry slices, lemon wheels, or mint sprigs.

Notes

Freeze rosé in ice cube trays for even freezing and easier blending. Use fresh lemon juice for best flavor. Adjust sweetness to taste. Serve immediately to maintain slushy texture. Leftovers can be stored in the freezer and re-blended before serving.
