A refreshing and soothing summer drink that combines the floral elegance of lavender with the citrusy zing of fresh lemons. Perfect for backyard barbecues, picnics, or lazy afternoons.

  • 68 large lemons, juiced (about 1 cup of fresh lemon juice)
  • 2 tablespoons dried culinary lavender buds
  • 1/2 cup granulated sugar
  • 2 tablespoons honey
  • Ice for serving
  • Optional garnishes: lemon slices and sprigs of fresh lavender

Instructions

  1. Prepare the Lavender Syrup: In a medium saucepan, combine 1 cup of water, 1/2 cup sugar, and 2 tablespoons of dried lavender buds. Heat the mixture over medium heat, stirring until the sugar fully dissolves. Once it starts to simmer, reduce the heat and let it steep for 5-7 minutes.
  2. Strain the Syrup: Remove the saucepan from heat and let it cool slightly. Then, strain the syrup through a fine mesh strainer to remove the lavender buds. Set the syrup aside and let it cool completely.
  3. Juice the Lemons: Juice your lemons to extract about 1 cup of fresh lemon juice. Remove any seeds, but keep the pulp for added texture and flavor.
  4. Mix the Lemonade: In a large pitcher, combine the cooled lavender syrup, fresh lemon juice, and 3 cups of cold water. Stir well to combine and taste. Adjust sweetness or tartness as desired.
  5. Chill & Serve: Add plenty of ice to the pitcher or serve over ice in individual glasses. Garnish with lemon slices and sprigs of fresh lavender.
