Instructions

  1. Place 8-10 fresh blackberries in your shaker. Use a muddler to press gentlyโ€”just enough to release the juice but not turn the berries into a puree, leaving some texture. This should take about 30 seconds.
  2. Pour in 2 oz (60 ml) gin, 1 oz (30 ml) fresh lemon juice, and ยพ oz (22 ml) simple syrup.
  3. Fill the shaker with ice cubes, secure the lid, and shake vigorously for 15-20 seconds until well chilled and slightly frothy.
  4. Using a fine mesh strainer, pour the mixture into a prepared glass filled halfway with fresh ice to remove seeds and pulp.
  5. Add about 2 oz (60 ml) of club soda to lighten the cocktail and give it a sparkling finish.
  6. Using tongs or gloves, carefully place a small pellet of dry ice into the glass. The dry ice will bubble and release mist immediately. Never swallow the dry ice and wait until it fully evaporates before finishing your drink.
  7. Thread a few fresh blackberries and a rosemary or mint sprig on a cocktail pick and add it to the glass for garnish.
