Peach Bellini Recipe Perfect for Easy Summer Cocktails

A refreshing summer cocktail made with sweet, juicy peaches and sparkling wine. Perfect for brunches, backyard parties, or relaxing evenings.

  • 23 fresh peaches, peeled and pitted
  • 1 bottle of Prosecco (or Champagne/Cava)
  • 12 tablespoons sugar (adjust to taste)
  • Juice of half a lemon
  • 23 ice cubes (optional)

Instructions

  1. Peel and pit 2-3 ripe peaches. If the skins are stubborn, blanch the peaches in boiling water for 30 seconds, then transfer to ice waterโ€”the skins will slide right off.
  2. Slice the peaches and add them to a blender. Add 1-2 tablespoons of sugar and the juice of half a lemon. Blend until smooth. If desired, strain the puree through a fine mesh strainer for a smoother texture.
  3. If your peaches werenโ€™t cold, you can chill the puree quickly by blending it with 2-3 ice cubes.
  4. Add 2-3 tablespoons of peach puree to the bottom of a champagne flute or wine glass. Slowly pour chilled Prosecco over the puree, tilting the glass to minimize foam.
  5. Use a spoon or cocktail stirrer to mix the puree and sparkling wine carefully.
  6. Serve immediately. Garnish with a fresh peach slice or a sprig of mint, if desired.
