  • 1 cup (240 ml) light rum (e.g., Bacardi or Mount Gay)
  • 1/2 cup (120 ml) dark rum (e.g., Goslingโ€™s Black Seal)
  • 1/2 cup (120 ml) fresh lime juice (about 4 to 5 limes)
  • 1/4 cup (60 ml) simple syrup (optional)
  • 810 dashes Angostura bitters
  • Slices of lime, lemon, and orange for garnish
  • Plenty of ice

Instructions

  1. Chill the cola and rums in the refrigerator for at least 2 hours before starting.
  2. Squeeze about 4 to 5 fresh limes to yield roughly 1/2 cup (120 ml) of juice. Strain to remove seeds and pulp.
  3. Prepare simple syrup if using by combining equal parts sugar and water in a small saucepan, heating gently until sugar dissolves, then cooling.
  4. In a large punch bowl, combine 1 cup light rum, 1/2 cup dark rum, and the fresh lime juice. Stir gently for about 30 seconds.
  5. Slowly pour in 1 liter of cola and stir carefully to mix without losing carbonation.
  6. Add 1/4 cup simple syrup if using, then add 8 to 10 dashes of Angostura bitters. Stir gently.
  7. Add plenty of ice cubes to chill the punch, then float slices of lime, lemon, and orange on top for garnish.
  8. Give the punch a gentle final stir just before serving. Serve into glasses over ice using a ladle.

Chill ingredients and punch bowl ahead to keep punch cold without diluting. Stir gently to preserve carbonation. Use fresh lime juice for best flavor. Adjust sweetness with simple syrup or skip for less sugar. For a non-alcoholic version, omit rum and add vanilla extract with extra lime juice.
