  • 1 oz fresh lemon juice
  • 3/4 oz simple syrup (equal parts sugar and water)
  • 1 large egg white (optional)
  • Gold sanding sugar (for rim)
  • Lemon wheel or twist (for garnish)
  • Ice cubes (large preferred)

Instructions

  1. Rub a lemon wedge around the rim of an old-fashioned glass to moisten it.
  2. Dip the rim into a shallow dish filled with gold sanding sugar, twisting gently to coat evenly. Set aside.
  3. Squeeze fresh lemon juice until you have 1 oz.
  4. In a cocktail shaker, add 2 oz Irish whiskey, 1 oz fresh lemon juice, 3/4 oz simple syrup, and egg white if using.
  5. Seal the shaker and dry shake vigorously without ice for about 15 seconds to emulsify the egg white.
  6. Add a handful of ice cubes to the shaker and shake again for 15-20 seconds until well chilled and frothy.
  7. Strain the mixture into the prepared glass, careful not to disturb the gold sugar rim.
  8. Garnish with a lemon wheel or twist on the rim.

Notes

Use fresh lemon juice for best flavor. The egg white is optional but adds a silky froth. Large ice cubes slow dilution. For vegan froth, substitute egg white with aquafaba. To get an even gold sugar rim, moisten the glass rim well but avoid dripping. Shake without ice first if using egg white to create foam.
