A festive and fun layered frozen margarita tower featuring strawberry, lime, and blue raspberry layers. Perfect for summer celebrations and easy to make with simple ingredients.

Ingredients

Scale
  • 2 cups (480 ml) tequila blanco (e.g., Jose Cuervo)
  • 1 cup (240 ml) fresh lime juice (about 810 limes)
  • 1 cup (200 g) granulated sugar
  • 2 cups (480 ml) water
  • 3 cups (360 g) ice cubes (crushed ice preferred)
  • 1 cup (240 ml) frozen strawberry concentrate (thawed slightly)
  • 1 cup (150 g) fresh or frozen strawberries (optional)
  • 1 cup (240 ml) frozen limeade concentrate (thawed)
  • 1 cup (240 ml) frozen blue raspberry concentrate (thawed)
  • Coarse salt or colored sugar (for rimming glasses)
  • Fresh lime wedges
  • Strawberries or blueberries (optional, for garnish)

Instructions

  1. Make the Margarita Base: In a large pitcher, combine tequila, fresh lime juice, sugar, and water. Stir thoroughly until the sugar dissolves completely. (5 minutes)
  2. Prepare Each Layer: For each flavor, blend 1 cup of the margarita base with 1 cup of crushed ice and 1 cup of the corresponding frozen fruit concentrate (strawberry, limeade, or blue raspberry). Blend on high until smooth but still slushy. (Approx. 3-4 minutes per layer)
  3. Layer the Margarita Tower: Pour the strawberry layer first into your clear glass or pitcher, filling about one-third. Place in the freezer for 5-7 minutes to firm up slightly.
  4. Next, gently spoon the lime layer over the back of a spoon onto the strawberry layer to prevent breaking through. Freeze another 5-7 minutes.
  5. Finally, repeat with the blue raspberry layer, spooning carefully and freezing until firm but still scoopable. (Total layering and freezing time about 20 minutes)
  6. Serve: Rim your glasses with salt or colored sugar, garnish with lime wedges and berries, then pour or scoop the layered margarita tower carefully into each glass. Serve immediately for the best texture.

Notes

Use crushed ice for smooth blending. Chill each layer in the freezer for 5-7 minutes before adding the next to keep layers separate. Rinse blender between layers to prevent color mixing. Adjust sugar to taste but keep it close to maintain texture. For a gluten-free version, use pure tequila and natural fruit concentrates. Non-alcoholic versions can substitute tequila with sparkling water or lemonade.
