Ingredients

Scale
  • 2 cups frozen strawberries
  • 2 ounces white rum (60 ml)
  • 1 tablespoon fresh lime juice
  • 1 tablespoon simple syrup
  • 1 cup ice cubes
  • 1.5 cups ice cubes (for white layer)
  • 2 ounces white rum (60 ml) for white layer
  • 1 tablespoon fresh lime juice (white layer)
  • 1 tablespoon simple syrup (white layer)
  • 2 tablespoons coconut cream or coconut milk
  • 2 cups frozen blueberries
  • 2 ounces white rum (60 ml) for blue layer
  • 1 tablespoon fresh lime juice (blue layer)
  • 1 tablespoon simple syrup (blue layer)
  • 1 cup ice cubes (blue layer)

Instructions

  1. Prepare the Red Layer: Combine 2 cups frozen strawberries, 2 oz white rum, 1 tablespoon fresh lime juice, 1 tablespoon simple syrup, and 1 cup ice cubes in a blender. Blend on high until smooth and slushie-like (about 30-45 seconds). Pour into a glass filling about one-third. Set aside or freeze for 5 minutes to firm up.
  2. Make the White Layer: Rinse blender to avoid color mixing. Add 1.5 cups ice cubes, 2 oz white rum, 1 tablespoon lime juice, 1 tablespoon simple syrup, and 2 tablespoons coconut cream. Blend until creamy and icy (about 40 seconds). Gently pour over red layer using the back of a spoon. Fill another third of the glass. Chill for 5-7 minutes if possible.
  3. Blend the Blue Layer: Clean blender again. Combine 2 cups frozen blueberries, 2 oz white rum, 1 tablespoon lime juice, 1 tablespoon simple syrup, and 1 cup ice cubes. Blend until thick and smooth (about 45 seconds). Slowly pour over the white layer using a spoon.
  4. Final Touches: Garnish with a fresh strawberry or a few blueberries on a cocktail pick. Insert a straw and serve immediately to enjoy the perfect slushie texture.

Notes

Use frozen fruit for best texture. Chill glasses before layering to keep layers distinct. Pour layers slowly over the back of a spoon to prevent mixing. For less alcohol, reduce rum by half and adjust lime juice or syrup. Coconut cream can be swapped with Greek yogurt or plant-based yogurt for creaminess. Store leftover layers separately in airtight containers in the freezer for up to 2 days.
