  • 1 oz fresh lemon juice (about 1 large lemon)
  • 3/4 oz honey (raw or wildflower preferred)
  • 4 oz cold water
  • Ice cubes (large, clear preferred)
  • Lemon wheel or twist for garnish
  • Optional: pinch of smoked sea salt for rimming the glass

Instructions

  1. Prep the glass: Rub a lemon wedge around the glass edge, then dip it into smoked sea salt if using. Set aside.
  2. Roll the lemon on the counter and squeeze 1 oz fresh lemon juice, straining out seeds if needed.
  3. In a cocktail shaker, combine honey and lemon juice. Shake or stir vigorously to dissolve the honey.
  4. Add 2 oz smoked bourbon and 4 oz cold water to the shaker. Fill with ice cubes.
  5. Secure the shaker lid and shake hard for about 15 seconds until well mixed and chilled.
  6. Strain the cocktail into the prepared glass filled with fresh ice.
  7. Garnish with a lemon wheel or twist and serve immediately.

Notes

Warm thick or crystallized honey slightly before mixing to help it dissolve. Use fresh lemon juice for best flavor. Large clear ice cubes melt slower and keep the drink crisp.
