Refreshing Blackberry Sage Spritz

A quick and easy summer cocktail featuring muddled fresh sage and juicy blackberries, balanced with lemon juice, simple syrup, and sparkling water for a refreshing, herbal twist.

Ingredients

  • 1/2 cup fresh blackberries (about 75g)
  • 68 fresh sage leaves
  • 1 oz (30 ml) fresh lemon juice
  • 1 oz (30 ml) simple syrup
  • 46 oz (120180 ml) sparkling water
  • Ice cubes
  • Optional garnish: fresh sage sprigs and whole blackberries
  • Optional: 1.5 oz (45 ml) gin or vodka for a boozy version

Instructions

  1. Place 1/2 cup fresh blackberries and 6-8 fresh sage leaves in a glass.
  2. Using a muddler or spoon, gently press down to bruise the berries and leaves, releasing their juices and aroma without shredding the sage.
  3. Add 1 oz (30 ml) fresh lemon juice and 1 oz (30 ml) simple syrup to the muddled mixture and gently stir to combine.
  4. Fill the glass about 3/4 full with ice cubes.
  5. Slowly pour 4-6 oz (120-180 ml) chilled sparkling water over the ice and stir gently once or twice to mix without losing bubbles.
  6. Garnish with a sprig of fresh sage and a couple of whole blackberries.
  7. Serve immediately.

Notes

Gently muddle the sage and blackberries to avoid bitterness. Prepare the blackberry-sage syrup ahead by muddling berries and sage with simple syrup and refrigerate up to 2 days. Add sparkling water and ice just before serving to keep fizz. Use chilled glasses to keep the drink cold longer. For a boozy version, add 1.5 oz gin or vodka after muddling.
