A festive, icy slush punch with layered red, white, and blue colors, perfect for summer parties and celebrations. This easy-to-make drink combines tart blue raspberry syrup, fresh strawberries, sparkling water, and crushed ice for a refreshing treat.

  • 1 cup (240 ml) blue raspberry syrup
  • 1 cup fresh strawberries, hulled and sliced (frozen can be used)
  • 2 cups (480 ml) club soda or sparkling water
  • 4 cups (about 1 liter) crushed ice
  • Optional: whipped cream for topping
  • 2 tablespoons (30 ml) lemon juice
  • 2 tablespoons (25 g) granulated sugar
  • 1/2 cup (75 g) blueberries for garnish

Instructions

  1. Prepare the Strawberry Layer: In a blender, combine sliced strawberries, lemon juice, and granulated sugar. Blend until smooth but still a little textured (about 30 seconds). Taste and adjust sweetness if needed. Chill in the refrigerator for 10 minutes.
  2. Crush Your Ice: If you donโ€™t have pre-crushed ice, pulse ice cubes in your blender or crush in a bag until you get fine, slushy pieces. Aim for a soft but not watery texture (about 4 cups or 1 liter).
  3. Mix Blue Raspberry Syrup with Sparkling Water: In a large pitcher, gently stir together the blue raspberry syrup and club soda. Stir carefully to keep the fizz.
  4. Layer the Punch: Pour one-third of the crushed ice into the bottom of your serving container. Slowly spoon half the strawberry puree over the ice, letting it settle without mixing too much. Add another one-third of the crushed ice on top, then pour the blue raspberry mixture carefully over it. Finish with the remaining crushed ice and the rest of the strawberry puree on top to create a layered effect.
  5. Garnish and Serve: Top with a dollop of whipped cream if using and scatter blueberries on top for a festive finish. Serve immediately with colorful straws or spoons.

Pour liquids slowly over the back of a spoon to maintain distinct layers. Serve immediately for best icy texture as the slush melts after about 30 minutes. Chill syrups, sparkling water, and pitcher beforehand to keep layers distinct. Adjust sugar to taste depending on fruit ripeness. For dairy-free, use almond or oat milk whipped topping. For an adult version, add vodka or rum.
