Refreshing Blueberry Mint Lemonade Cooler

A quick and easy lemonade cooler combining fresh blueberries, mint, and lemon juice for a bright, tart, and sweet refreshment perfect for hot days.

Ingredients

  • 1 cup fresh blueberries (about 150 grams)
  • 1012 fresh mint leaves
  • 1 cup fresh lemon juice (about 45 lemons, 240 ml)
  • 3/4 cup granulated sugar (about 150 grams)
  • 4 cups cold water (960 ml), plain or sparkling
  • Ice cubes, plenty
  • Optional: lemon slices and extra mint sprigs for garnish

Instructions

  1. In a pitcher, add 1 cup of fresh blueberries and 10-12 mint leaves. Gently muddle using a muddler or the back of a wooden spoon for 2-3 minutes to crush the blueberries and bruise the mint without pureeing.
  2. In a small saucepan, combine 3/4 cup granulated sugar with 1 cup water. Heat over medium, stirring until sugar dissolves completely (3-5 minutes). Let the simple syrup cool completely.
  3. While the syrup cools, squeeze 1 cup fresh lemon juice from 4-5 lemons and strain to remove seeds and pulp.
  4. Add the cooled simple syrup and lemon juice to the muddled blueberries and mint in the pitcher. Stir gently to combine.
  5. Pour in 4 cups cold water (still or sparkling) and stir again. Add plenty of ice cubes to chill the cooler thoroughly.
  6. Taste and adjust sweetness by adding more sugar or honey if desired. Add extra water or ice if too strong.
  7. Serve immediately over ice, garnished with lemon slices and mint sprigs.

Notes

Gently muddle mint to avoid bitterness. Use homemade simple syrup for smooth sweetness. Roll lemons before juicing for more juice. Frozen blueberries can be used if thawed slightly. For a fizzy version, use sparkling water. To keep cooler extra cold without dilution, freeze blueberries or lemon slices as ice cubes.
