Refreshing Blueberry Mint Mojito Slushie

A quick and easy blueberry mint mojito slushie that blends fresh blueberries, mint, lime, rum, and ice into a refreshing summer drink with a fun slushie texture.

Ingredients

  • 1 cup fresh blueberries (about 150 g)
  • 1012 fresh mint leaves
  • Juice of 2 medium limes (about 3 tablespoons / 45 ml)
  • 1/2 cup white rum (120 ml)
  • 1/4 cup simple syrup (60 ml)
  • 2 cups ice cubes (about 300 g)
  • 1/2 cup sparkling water (optional, 120 ml)

Instructions

  1. Prepare the simple syrup if making your own: Combine 1/4 cup granulated sugar and 1/4 cup water in a small saucepan. Heat over medium heat, stirring constantly until sugar dissolves. Let cool (about 10 minutes).
  2. Juice the limes: Roll limes on counter, cut in half, and juice until you have about 3 tablespoons (45 ml). Remove seeds.
  3. Add blueberries, mint leaves, lime juice, white rum, simple syrup, and ice cubes to a high-powered blender. Do not add sparkling water yet if using.
  4. Blend on high speed for 1-2 minutes until smooth and slushie-like. Stop and scrape sides if needed.
  5. Taste and adjust sweetness or tartness by adding more simple syrup or lime juice. Blend briefly again if adding.
  6. Pour slushie into tall glasses. Top each glass with 1/4 to 1/2 cup (60-120 ml) chilled sparkling water if desired and gently stir.
  7. Garnish with a sprig of fresh mint and a few blueberries.

Notes

If blender struggles with ice, crush ice separately or blend in smaller batches. Avoid over-blending mint to prevent bitterness. Serve immediately for best texture. For a mocktail, omit rum and add extra sparkling water or white grape juice. Use frozen blueberries for a thicker slushie but add extra lime juice to maintain brightness.
