A quick and easy 5-ingredient summer cocktail featuring fresh blueberries, mint, lime juice, coconut rum, and soda water for a refreshing tropical twist.

  • 1/2 cup fresh blueberries (about 75g), washed
  • 1012 fresh mint leaves, gently torn or whole
  • Juice of 1 large lime (about 2 tablespoons or 30 ml)
  • 2 ounces (60 ml) coconut rum (e.g., Malibu)
  • 46 ounces (120180 ml) soda water or club soda, chilled
  • 1 teaspoon (5 ml) sugar or simple syrup (optional)
  • Ice cubes, crushed or cubed

Instructions

  1. Place 1/2 cup fresh blueberries and 10-12 mint leaves in a glass.
  2. Gently muddle for 20-30 seconds until blueberries release juice but remain partially intact.
  3. Add juice of one lime (about 2 tablespoons or 30 ml). If desired, add 1 teaspoon sugar or simple syrup and stir gently.
  4. Pour in 2 ounces (60 ml) coconut rum.
  5. Fill the glass with crushed or cubed ice, leaving room for soda water.
  6. Top with 4-6 ounces (120-180 ml) chilled soda water or club soda and stir gently once.
  7. Garnish with a sprig of fresh mint and a few whole blueberries. Serve immediately.

Notes

Do not over-muddle the mint to avoid bitterness. Adjust sugar based on blueberry sweetness. Use fresh lime juice for best flavor. For a mocktail, replace coconut rum with coconut-flavored sparkling water. Frozen blueberries can be used if thawed slightly before muddling. Keep soda water chilled to maintain fizz.
