A festive and refreshing adult popsicle recipe featuring layered strawberry vodka, creamy coconut milk, and blueberry lemonade with vodka or rum, perfect for summer celebrations.

  • 1 cup fresh or frozen strawberries, hulled and chopped
  • 2 tablespoons granulated sugar (adjust for sweetness)
  • 1 tablespoon fresh lemon juice
  • 1/4 cup vodka (Titoโ€™s recommended)
  • 1 cup full-fat coconut milk, well shaken
  • 2 tablespoons powdered sugar
  • 1 teaspoon pure vanilla extract
  • Pinch of sea salt (optional)
  • 1 cup blueberry lemonade (homemade or store-bought)
  • 1/2 cup blueberries, fresh or frozen
  • 1/4 cup vodka or white rum

Instructions

  1. Prepare the Red Layer (Strawberry Vodka): In a blender, combine strawberries, granulated sugar, and lemon juice. Blend until smooth. Add vodka and pulse a few times to mix. Taste and adjust sweetness if needed. Pour about 1/3 of this mixture into each popsicle mold, filling halfway. Freeze for at least 1 hour until firm but not rock solid.
  2. Make the White Layer (Creamy Coconut): In a bowl, whisk together coconut milk, powdered sugar, vanilla extract, and sea salt until smooth and slightly thickened. Gently spoon this mixture over the frozen red layer in each mold, filling up to about 3/4 full. Freeze again for 1 to 1.5 hours until firm.
  3. Prepare the Blue Layer (Blueberry Lemonade): Blend blueberries with blueberry lemonade until mostly smooth but still slightly textured. Stir in vodka or white rum. Pour this final layer over the white coconut layer, filling the molds to the top. Insert popsicle sticks, then freeze for at least 4 hours or overnight to fully set.
  4. Unmold and Serve: To remove pops, run warm water over the outside of the molds for 10-15 seconds (avoid water inside). Gently pull the sticks out and serve immediately for best texture.

Notes

Freeze each layer until firm but not rock solid to prevent mixing. Use full-fat coconut milk for creamy texture. If coconut milk separates, whisk before layering. Blend blueberries with lemonade to thicken the blue layer. For non-alcoholic version, substitute vodka or rum with extra lemonade or coconut water. Silicone molds are easier for unmolding. Store popsicles in freezer-safe container to keep upright and prevent freezer burn.
