An easy, bright, and refreshing summer cocktail combining juicy peaches, smooth bourbon, and fresh mint for a perfect backyard party drink.

  • 2 ripe peaches, sliced and roughly chopped
  • 2 ounces bourbon
  • 810 fresh mint leaves, plus extra for garnish
  • 1 tablespoon simple syrup
  • 1/2 ounce fresh lemon juice
  • Club soda to top off
  • Ice cubes as needed
  • Optional: dash of aromatic bitters

Instructions

  1. Wash, pit, and chop 2 ripe peaches into roughly 1-inch pieces. Place them in your mixing glass or shaker.
  2. Add 8-10 fresh mint leaves on top of the peaches. Gently muddle the fruit and mint together using a muddler or wooden spoon until fragrant and juicy but not pureed.
  3. Pour in 2 ounces bourbon, 1 tablespoon simple syrup, and 1/2 ounce fresh lemon juice. Stir gently to combine.
  4. Fill the glass or shaker with ice cubes (about 4-5 large cubes). Stir briskly for 15-20 seconds to chill and slightly dilute.
  5. Strain the mixture into a highball or old-fashioned glass filled with fresh ice. Straining is optional for a rustic drink.
  6. Top with a splash of club soda or sparkling water. Stir gently once more to combine.
  7. Garnish with a sprig of fresh mint and a thin peach slice on the rim.

Notes

Use fresh, ripe peaches for best flavor; frozen peaches can be used if thawed and drained. Avoid over-muddling mint to prevent bitterness. Large ice cubes melt slower and keep the drink cold without watering it down quickly. You can prepare the peach smash base ahead and refrigerate for up to 24 hours, but add club soda just before serving to keep fizz fresh. Optional aromatic bitters add complexity.
