Instructions

  1. Make the Peach Syrup: In a medium saucepan, combine sliced peaches, ยฝ cup sugar, and 2 cups water. Bring to a gentle boil over medium heat, stirring occasionally to dissolve sugar. Reduce heat and simmer for 10 minutes until peaches are soft and syrup thickens slightly. Remove from heat and let cool for 10 minutes.
  2. Strain the Syrup: Pour the peach mixture through a fine mesh strainer into a bowl or pitcher, pressing the peaches gently with a spoon to extract flavor. Discard solids or save for topping yogurt or oatmeal.
  3. Brew the Tea: While the syrup cools, brew 4 cups of strong black tea. Steep loose leaf or quality tea bags for 5-7 minutes in hot water (about 200ยฐF/93ยฐC). Remove tea bags or strain leaves and let the tea come to room temperature.
  4. Prepare the Mint: Lightly bruise 10-12 fresh mint leaves with a muddler or the back of a spoon to release oils. Add mint to the cooled tea and let steep for 5 minutes, then remove leaves to avoid bitterness.
  5. Combine Everything: In a large pitcher, mix the brewed tea, peach syrup, 2 tablespoons fresh lemon juice, and ยฝ to ยพ cup bourbon. Stir gently. Taste and adjust sweetness or bourbon if needed. Chill in the fridge for at least 30 minutes.
