A light, hydrating mocktail combining coconut water, fresh mint, lime, and a touch of sweetness for a refreshing and uplifting drink perfect for any occasion.

Ingredients

  • 1 cup (240 ml) pure, unsweetened coconut water
  • 1012 fresh mint leaves
  • 1 medium lime, juiced (about 1 tablespoon / 15 ml)
  • 12 teaspoons simple syrup (adjust to taste; can substitute honey, agave, stevia, or monk fruit sweetener)
  • Crushed ice
  • Optional: ยฝ cup (120 ml) sparkling water for a fizzy finish

Instructions

  1. Wash mint leaves thoroughly and pat dry gently.
  2. Add mint leaves and 1-2 teaspoons of simple syrup to a serving glass.
  3. Gently muddle the mint and syrup for about 30 seconds to release oils without tearing the leaves.
  4. Pour in freshly squeezed lime juice and stir quickly to blend.
  5. Fill the glass halfway with crushed ice.
  6. Pour 1 cup (240 ml) coconut water over the ice. For a bubbly mocktail, add ยฝ cup (120 ml) sparkling water instead or mix half and half.
  7. Gently stir to combine flavors without crushing the mint further.
  8. Garnish with a sprig of fresh mint and a thin slice of lime. Serve immediately.

Notes

Press mint leaves gently to avoid bitter flavors. Use fresh lime juice for best taste. Chill coconut water beforehand to reduce the need for excess ice. Add sparkling water last and stir gently to preserve fizz. If drink tastes flat, a pinch of sea salt can brighten flavors. Prepare mint, lime, and syrup base up to 24 hours ahead; add coconut water and ice just before serving.
