- 4 cups (960 ml) water, divided (2 cups for simple syrup, 2 cups for dilution)
- About 2 large handfuls of cotton candy (pink or blue, fresh is best)
- Ice cubes as needed
- Lemon slices for garnish (optional)
- Fresh mint leaves for garnish (a few sprigs)
Instructions
- Make the Simple Syrup: In a medium saucepan, combine 1 cup granulated sugar and 2 cups water. Heat over medium heat, stirring occasionally, until the sugar fully dissolves (about 5 minutes). Remove from heat and let cool slightly.
- Juice the Lemons: While the syrup cools, juice about 6 large lemons to get roughly 1 cup (240 ml) fresh lemon juice. Strain if desired to remove pulp and seeds.
- Combine Lemon Juice and Syrup: In a large pitcher, mix the fresh lemon juice with the cooled simple syrup. Stir well to blend.
- Add Water and Ice: Pour in 2 cups cold water and stir. Add plenty of ice cubes to chill the lemonade.
- Prepare the Cotton Candy: Just before serving, gently place 2 large handfuls of cotton candy on top of each glass or float a small cloud in the pitcher. The cotton candy will slowly dissolve into the lemonade.
- Garnish and Serve: Add lemon slices and fresh mint sprigs to each glass. Serve immediately with a straw or festive stirrer.
