  • 1 tablespoon simple syrup (equal parts sugar and water, dissolved; adjust sweetness to taste)
  • Ice cubes, as needed
  • Lemon slices for garnish (optional)

Instructions

  1. Peel and grate about 1 tablespoon of fresh ginger. Place the grated ginger into a fine mesh strainer or cheesecloth and press to extract approximately 1 tablespoon of ginger juice.
  2. Using a citrus juicer, squeeze about 1/4 cup (60 ml) of fresh lemon juice. Strain to remove seeds or pulp.
  3. If not already prepared, dissolve equal parts sugar and water over low heat to make simple syrup. Cool before using.
  4. In a mixing glass or serving glass, stir together the lemon juice, ginger juice, and simple syrup. Adjust sweetness if desired.
  5. Fill the glass about halfway with ice cubes. Slowly pour 12 oz (355 ml) of craft beer over the ice and gently stir once to combine, preserving carbonation.
  6. Garnish with a lemon slice or thin ginger slice on the rim of the glass. Serve immediately.
