A light, bubbly cocktail combining crisp cucumber, floral elderflower syrup, gin, and soda water for a refreshing summer drink that’s quick and easy to make.

Ingredients

Scale
  • 2 ounces (60 ml) gin (preferably London dry gin)
  • 1 ounce (30 ml) elderflower syrup
  • 4 thin slices fresh cucumber, plus extra for garnish
  • 0.5 ounces (15 ml) fresh lime juice
  • 3 ounces (90 ml) soda water
  • Ice cubes
  • Optional: fresh mint leaves for garnish or muddling

Instructions

  1. Place 4 thin cucumber slices in the bottom of a cocktail shaker or mixing glass.
  2. Gently muddle the cucumber about 5-6 times to release fresh juices without pulverizing, about 30 seconds.
  3. Add 2 ounces gin, 1 ounce elderflower syrup, and 0.5 ounces freshly squeezed lime juice to the shaker.
  4. Fill the shaker with about 1 cup (240 ml) of ice cubes to chill the drink.
  5. Shake gently for 10-12 seconds or stir for about 15 seconds, depending on preference.
  6. Fill a highball or Collins glass with fresh ice cubes.
  7. Strain the cocktail mixture into the glass, leaving space at the top for soda water.
  8. Top with about 3 ounces (90 ml) chilled soda water, pouring slowly to preserve fizz.
  9. Garnish with 1-2 thin cucumber slices and a sprig of fresh mint if desired.
  10. Serve immediately with a straw or stirrer.

Notes

Muddle cucumber gently to avoid bitterness. Use fresh lime juice for best flavor. Pour soda water slowly to preserve carbonation. Adjust lime juice if elderflower syrup is very sweet. Can be made non-alcoholic by replacing gin with cucumber-infused sparkling water.
