A cool and fresh summer drink with a gentle spicy kick from jalapeño, balanced by crisp cucumber and bright lime juice. Perfect for refreshing hydration with a little excitement.

Ingredients

Scale
  • 2 medium English cucumbers, peeled and chopped
  • 1 medium jalapeño, sliced (seeds optional for heat control)
  • Juice of 2 limes
  • 4 cups (1 liter) cold water, preferably filtered
  • 23 tablespoons sugar or honey (adjust to taste)
  • 68 fresh mint leaves (optional)
  • Ice cubes for serving

Instructions

  1. Peel the cucumbers and chop into chunks (about 3 cups or 450 grams). Slice the jalapeño into thin rounds, removing seeds if milder heat is desired.
  2. Add cucumbers, jalapeño slices, lime juice, sugar or honey, and 2 cups (500 ml) cold water to a blender. Blend on high for 1-2 minutes until smooth and vibrant green.
  3. Strain the blended mixture through a fine mesh strainer or cheesecloth into a large pitcher, pressing gently to extract as much juice as possible.
  4. Stir in the remaining 2 cups (500 ml) cold water and add torn mint leaves if using. Let sit for 5-10 minutes to meld flavors.
  5. Serve chilled over ice cubes, garnished with a cucumber slice or mint sprig.

Notes

Adjust jalapeño seeds to control spice level. Use seedless English cucumbers for less bitterness. Fresh lime juice is preferred over bottled. For a fizz, add sparkling water before serving. Store leftovers in an airtight container in the refrigerator for up to 2 days. Avoid freezing.
