A bright and smoky mezcal cocktail muddled with fresh cucumber and lime, topped with grapefruit soda for a refreshing and easy-to-make drink perfect for summer and beyond.

  • 2 ounces mezcal (preferably joven mezcal like Del Maguey Vida)
  • 45 slices fresh cucumber, peeled and thinly sliced
  • 1 ounce fresh lime juice (about 2 tablespoons)
  • 3 ounces grapefruit soda (e.g., Jarritos or Squirt)
  • 1 teaspoon agave syrup (optional)
  • Pinch of salt (for rimming the glass)
  • Ice cubes as needed
  • Cucumber wheel or lime wedge for garnish

Instructions

  1. Rub a lime wedge around the rim of your glass, then dip it into a small plate of salt. Set aside.
  2. Place 4-5 thin cucumber slices in your shaker. Use a muddler to press and twist gently until fresh juices are released, avoiding over-mashing.
  3. Add 2 ounces mezcal and 1 ounce freshly squeezed lime juice to the shaker. Add 1 teaspoon agave syrup if desired.
  4. Shake or stir gently to combine the ingredients without bruising the cucumber flavor.
  5. Fill the prepared glass with plenty of ice cubes.
  6. Strain the cucumber-mezcal mixture into the glass over the ice. Top with 3 ounces grapefruit soda and stir gently to blend flavors.
  7. Garnish with a cucumber wheel or lime wedge on the rim.

Notes

Muddle cucumber gently to avoid bitterness. Use fresh lime juice for best flavor. Choose natural grapefruit soda brands like Jarritos or Squirt for authentic taste. Prepare the cucumber-mezcal-lime mixture up to 24 hours ahead and add soda and ice just before serving. Adjust sweetness with agave syrup and fizz with grapefruit soda to taste. Salt rim enhances flavor balance.
