A bright, refreshing, and alcohol-free mocktail featuring cucumber, mint, lemon juice, simple syrup, and sparkling water. Perfect for summer and any occasion where you want a crisp, lively drink without the buzz.

Ingredients

  • 1/2 medium cucumber, thinly sliced and lightly muddled
  • 1012 fresh mint leaves, gently bruised
  • 1 tablespoon (15 ml) freshly squeezed lemon juice
  • 1 tablespoon (15 ml) simple syrup (homemade or store-bought)
  • 1 cup (240 ml) chilled sparkling water
  • Ice cubes as needed
  • Optional garnish: extra cucumber slices and a sprig of mint

Instructions

  1. Slice about half a medium cucumber into thin rounds.
  2. Place cucumber slices and 10-12 fresh mint leaves in a mixing glass or pitcher.
  3. Gently muddle with a muddler or the back of a wooden spoon to release juices and aromas without pulverizing (about 1 minute).
  4. Add 1 tablespoon freshly squeezed lemon juice and 1 tablespoon simple syrup; stir gently to combine (about 30 seconds).
  5. Fill a serving glass with ice cubes to the top.
  6. Strain the cucumber-mint mixture into the glass over the ice if you prefer less pulp, or pour as is for extra texture (about 30 seconds).
  7. Top off the glass with 1 cup chilled sparkling water and stir gently once to blend without losing bubbles.
  8. Garnish with an extra cucumber slice and a sprig of mint. Serve immediately.

Notes

Gently muddle mint and cucumber to avoid bitterness. Use fresh lemon juice for best flavor. Add sparkling water last to keep fizz. Can prep base mixture up to 24 hours ahead and add sparkling water before serving. Optional variations include adding fresh berries, swapping mint for basil, or using different sparkling bases.
