A vibrant, tropical non-alcoholic drink combining pineapple juice, coconut cream, and blue curaรงao syrup with a fizzy soda water finish. Perfect for summer refreshment with a bright, playful flavor.

Ingredients

Scale
  • 4 oz pineapple juice (fresh or store-bought, unsweetened preferred)
  • 1 oz coconut cream (thick, unsweetened)
  • 0.5 oz blue curaรงao syrup (non-alcoholic)
  • 0.5 oz fresh lime juice (about half a lime)
  • 23 oz soda water or sparkling water
  • Ice cubes
  • Pineapple wedge or maraschino cherry (optional, for garnish)
  • Mint sprig (optional, for garnish)

Instructions

  1. Chill your serving glass in the freezer for 5-10 minutes.
  2. In a mixing glass or cocktail shaker, combine pineapple juice, coconut cream, and blue curaรงao syrup.
  3. Add fresh lime juice to the mixture.
  4. Add ice and shake vigorously for about 10 seconds, or stir well until coconut cream is fully incorporated and smooth.
  5. Remove the chilled glass from the freezer and fill it about 3/4 full with fresh ice cubes.
  6. Strain the mixed mocktail into the chilled glass over the ice.
  7. Gently top off with soda water or sparkling water to maintain the bubbles.
  8. Garnish with a pineapple wedge or maraschino cherry and a sprig of mint if desired.
  9. Give the drink a gentle stir to combine flavors without losing fizz and serve immediately.

Notes

If coconut cream is too thick or clumpy, warm it slightly before mixing to avoid lumps. Chill the glass to keep the drink cold longer. Pour soda water gently to preserve fizz. Larger ice cubes melt slower and help prevent dilution. For a sweeter drink, add simple syrup or honey if desired. Substitute soda water with lemon-lime soda or tonic water for different flavor profiles but note increased sugar or bitterness.
