A cool and refreshing summer drink combining the sweet-tart punch of blueberries, bright lemon zing, and a subtle floral hint of lavender in an icy slushie.

  • 1 cup (240 ml) fresh lemon juice
  • 1/2 cup (100 g) granulated sugar (or honey/agave for natural sweetener)
  • 1 teaspoon dried culinary lavender (culinary-grade)
  • 2 cups (300 g) frozen blueberries
  • 2 cups (480 ml) cold water
  • 2 cups (about 300 g) ice cubes
  • Optional: fresh lavender sprigs for garnish

Instructions

  1. Combine 1 cup fresh lemon juice with 2 cups cold water in a pitcher.
  2. Add 1/2 cup granulated sugar and stir until mostly dissolved.
  3. Add 1 teaspoon dried culinary lavender to the lemonade mixture, cover and steep at room temperature for 15 minutes.
  4. Strain the lavender buds using a fine mesh strainer, pressing gently to extract flavor.
  5. In a blender, add 2 cups frozen blueberries, the lavender-infused lemonade, and 2 cups ice cubes.
  6. Blend on high for about 1 minute until smooth and slush-like. Add a splash of cold water if too thick and blend again.
  7. Taste and adjust sweetness if needed by adding more sugar or honey and pulse briefly.
  8. Serve immediately in chilled glasses, garnished with fresh lavender sprigs or blueberries.

Notes

Use culinary-grade lavender to avoid bitterness. Steep lavender for exactly 15 minutes for best flavor. Use frozen blueberries for optimal slushie texture. If too thick, add a splash of cold water and blend again. Prepare lavender lemonade base up to a day ahead and blend with frozen blueberries and ice just before serving.
