A quick and easy frozen peach bellini slushie that combines the creamy texture of frozen peaches with crisp prosecco for a refreshing summer cocktail or mocktail.

Ingredients

  • 2 cups (300g) sliced frozen peaches
  • 1 cup (240ml) chilled prosecco
  • 2 tablespoons (30ml) peach schnapps or peach liqueur (optional)
  • 1 tablespoon (15ml) fresh lemon juice
  • 1 to 2 teaspoons (5-10ml) simple syrup or honey
  • 1 cup (240ml) ice cubes

Instructions

  1. If using fresh peaches, peel and slice them, then freeze for at least 3 hours until solid.
  2. Combine 2 cups frozen peaches and 1 cup ice cubes in a blender.
  3. Add 1 cup chilled prosecco, 1 tablespoon fresh lemon juice, and 2 tablespoons peach schnapps if using.
  4. Drizzle in 1 to 2 teaspoons of simple syrup or honey, adjusting to taste.
  5. Pulse blend on medium-high speed for 30-45 seconds, scraping down the sides as needed until smooth and icy.
  6. Taste and adjust sweetness or thickness by adding more syrup, prosecco, or ice cubes as desired.
  7. Serve immediately in chilled glasses, garnished with a peach slice or mint sprig.

Notes

Use small-curd frozen peaches or freeze fresh peaches yourself to avoid icy chunks. Pulse blend rather than continuous blending to avoid warming the mixture. Use chilled prosecco to keep the slushie icy longer. Adjust sweetness carefully to avoid over-sweetening. For non-alcoholic version, substitute prosecco and schnapps with sparkling water or lemon-lime soda and add peach nectar.
