  • 2 oz (60 ml) white rum (e.g., Bacardi)
  • 1 oz (30 ml) freshly squeezed lime juice
  • ยฝ oz (15 ml) simple syrup
  • 1 cup (240 ml) ice cubes
  • ยฝ cup (50g) shredded unsweetened coconut, toasted
  • 2 tbsp (25g) granulated sugar
  • Optional: fresh strawberry or lime wedge for garnish

Instructions

  1. Toast the shredded coconut in a dry skillet over medium heat, stirring constantly, until golden brown and fragrant, about 3-5 minutes. Transfer to a plate to cool.
  2. In a small bowl, combine the toasted coconut and granulated sugar. Spread the mixture on a shallow plate.
  3. Rub a lime wedge around the rim of each serving glass to moisten. Dip the rim into the coconut-sugar mixture, pressing gently to coat evenly. Set glasses aside.
  4. In a blender, combine frozen strawberries, white rum, freshly squeezed lime juice, simple syrup, and ice cubes. Blend on high until smooth and slushy, about 30-45 seconds.
  5. Check consistency: if too thick, add a splash of water or more rum; if too thin, add more ice cubes and blend again.
  6. Pour the daiquiri into the prepared glasses.
  7. Garnish with a fresh strawberry or lime wedge if desired.
  8. Serve immediately for best icy texture.
