Frozen Strawberry Rosé Popsicle Cocktail - featured image

A simple and refreshing frozen cocktail popsicle combining dry rosé wine, fresh strawberries, lemon juice, and optional sweetener, perfect for cooling down on hot summer days.

Ingredients

  • 1 cup (240 ml) dry or off-dry rosé wine
  • 1 cup (150 g) fresh strawberries, hulled and halved
  • 2 tablespoons (30 ml) fresh lemon juice
  • 2 tablespoons (30 ml) simple syrup or honey (optional)
  • ½ cup (120 ml) sparkling water (optional)

Instructions

  1. Rinse, hull, and halve the strawberries. For a chunkier texture, roughly chop half and puree the other half in a blender.
  2. In a mixing bowl, combine the pureed strawberries, chopped strawberries, rosé wine, freshly squeezed lemon juice, and simple syrup or honey if using. Stir gently to mix.
  3. If desired, fold in sparkling water gently right before filling molds to keep bubbles alive.
  4. Pour the mixture evenly into popsicle molds, leaving about ½ inch of space at the top for expansion during freezing.
  5. Insert sticks and freeze for at least 6 hours or overnight until fully solid.
  6. To unmold, briefly run warm water over the outside of the molds to loosen them, then gently pull the sticks out.

Notes

Adjust sweetness based on rosé dryness; too much alcohol can prevent proper freezing; run warm water on molds to ease unmolding; popsicles keep well up to 2 weeks in airtight container; for non-alcoholic version, substitute rosé with sparkling white grape juice or flavored sparkling water.
