A quick and easy frozen watermelon slushie with lime and a pinch of salt, perfect for cooling down on hot summer days with a refreshing balance of sweet, tart, and salty flavors.

Ingredients

Scale
  • 4 cups seedless watermelon, cut into cubes and frozen (about 600g or 21 oz)
  • Juice of 2 fresh limes (about 3 tablespoons)
  • 1/4 teaspoon fine sea salt or kosher salt
  • 1 cup ice cubes (optional, about 240ml or 8 fl oz)
  • 12 teaspoons honey or agave syrup (optional)

Instructions

  1. Freeze the watermelon: Cut the seedless watermelon into 1-inch cubes, spread evenly on a parchment-lined baking sheet, and freeze for at least 4 hours or overnight until solid.
  2. Juice the limes: While watermelon freezes, juice 2 fresh limes. Strain seeds to avoid bitterness and set aside.
  3. Blend the slushie: Add frozen watermelon cubes and lime juice to your blender, along with 1/4 teaspoon salt and ice cubes if using. Blend on high until smooth and slushy, about 1-2 minutes. Stop to scrape down sides if needed.
  4. Taste and adjust: If you want it sweeter, add 1-2 teaspoons honey or agave and blend briefly again. If too thick, add a splash of cold water or more lime juice for brightness.
  5. Serve immediately: Pour into chilled glasses and garnish with a lime wedge or a tiny pinch of salt on top for extra zing. Enjoy right away for the best icy texture.

Notes

Freeze watermelon in a single layer to prevent clumping. Use fresh lime juice for best flavor. The pinch of salt enhances sweetness and balances acidity. Pulse frozen fruit first if blender struggles. Serve immediately as the slushie melts quickly. Ice cubes are optional and may dilute flavor if watermelon is fully frozen.
