Refreshing Ginger Beer Moscow Mule Mocktail

A zesty, non-alcoholic mocktail combining spicy ginger beer, fresh lime juice, ginger syrup, and mint for a refreshing summer drink that mimics the classic Moscow Mule.

Ingredients

  • 8 oz (240 ml) spicy ginger beer
  • 1 oz (30 ml) fresh lime juice
  • 0.5 oz (15 ml) fresh ginger syrup
  • 68 fresh mint leaves, gently bruised
  • Ice cubes
  • Pinch of salt (about 1/8 tsp)
  • Optional garnish: lime wedges and sprigs of mint

Instructions

  1. Prepare the ginger syrup by simmering 1 cup sugar, 1 cup water, and 1/4 cup sliced fresh ginger on medium-low for 10 minutes. Strain and cool completely.
  2. Squeeze fresh limes to get about 1 oz (30 ml) of juice per mocktail.
  3. Add 6-8 fresh mint leaves to a highball glass or copper mug and gently muddle to release oils without tearing.
  4. Pour in the fresh lime juice and 0.5 oz (15 ml) ginger syrup over the muddled mint.
  5. Fill the glass with plenty of ice cubes.
  6. Slowly top with 8 oz (240 ml) of ginger beer to preserve fizz.
  7. Sprinkle a tiny pinch of salt over the top and gently stir once with a bar spoon.
  8. Garnish with a lime wedge and a sprig of mint and serve immediately.

Notes

Do not over-muddle the mint to avoid bitterness. Keep ginger syrup chilled for best blending. Pour ginger beer slowly to maintain fizz. Adjust lime juice and ginger syrup to taste for balance. Prepare lime juice, syrup, and mint ahead and add ice and ginger beer just before serving to keep fizz fresh.
