Refreshing Grapefruit Aperol Spritz Cocktail

A bright and bubbly summer cocktail combining fresh grapefruit juice with Aperol, prosecco, and soda water for a perfectly balanced, refreshing drink.

Ingredients

  • 2 ounces (60 ml) fresh grapefruit juice
  • 2 ounces (60 ml) Aperol
  • 3 ounces (90 ml) prosecco
  • 1 ounce (30 ml) soda water
  • Ice cubes (4-5 large)
  • Grapefruit slices for garnish
  • Optional: sprig of fresh rosemary or mint

Instructions

  1. Chill your wine or balloon glass in the fridge or freezer for about 10 minutes.
  2. Cut the grapefruit in half and use a citrus juicer to extract about 2 ounces (60 ml) of juice. Strain to remove seeds or pulp if desired.
  3. In a mixing glass or cocktail shaker, combine the fresh grapefruit juice with 2 ounces (60 ml) of Aperol. Stir gently or shake lightly to mix.
  4. Fill the chilled serving glass generously with 4-5 large ice cubes.
  5. Strain the grapefruit and Aperol mixture over the ice in your glass.
  6. Slowly add 3 ounces (90 ml) of prosecco, followed by 1 ounce (30 ml) of soda water to maintain fizz.
  7. Garnish with a thin slice of grapefruit on the rim or gently muddle a slice with a sprig of rosemary in the glass (optional).
  8. Give the drink a very gentle stir with a bar spoon to combine without flattening the bubbles.
  9. Serve immediately and enjoy.

Notes

Use fresh grapefruit juice for best flavor; avoid bottled juice which can taste flat. Pour prosecco and soda water slowly to preserve bubbles. Large clear ice cubes keep the drink crisp longer. Optional garnishes like rosemary or mint add herbal aroma. For less bitterness, add a splash of simple syrup or a pinch of sugar. The cocktail base (grapefruit juice and Aperol) can be prepared up to 24 hours in advance and refrigerated; add prosecco, soda, and ice just before serving.
