  • Fresh grapefruit slices for garnish
  • Fresh mint leaves (optional)

Instructions

  1. Roll 2-3 medium Ruby Red grapefruits firmly on the counter to loosen the juice. Cut each in half and use a citrus juicer to extract about 1 cup (240 ml) of fresh juice. This should take about 5 minutes.
  2. If making homemade simple syrup, combine equal parts sugar and water in a small saucepan, heat gently until the sugar dissolves, then cool. Measure 2 tablespoons (30 ml). If using store-bought, measure out 2 tablespoons.
  3. In a large pitcher, combine the fresh grapefruit juice and simple syrup. Stir gently to blend flavors, tasting to adjust sweetness if needed.
  4. Ensure your champagne or sparkling wine has been chilled in the fridge for at least 2 hours before mixing.
  5. Slowly pour the chilled champagne into the grapefruit mixture, stirring gently with a whisk or spoon to keep the bubbles alive. This step takes about 2 minutes.
  6. Pour the mimosa into champagne flutes, garnish with a thin slice of grapefruit and a sprig of fresh mint if desired. Serve immediately for the best bubbles and freshest flavor.
