A bright, bubbly, and herbal non-alcoholic drink featuring fresh grapefruit juice, rosemary, and sparkling water. Perfect for summer parties and casual gatherings.

Ingredients

  • 1 cup (240 ml) fresh grapefruit juice
  • 23 fresh rosemary sprigs
  • 1 to 1.5 cups (240360 ml) sparkling water
  • 2 tablespoons (30 ml) simple syrup
  • 1 tablespoon (15 ml) lemon juice
  • Ice cubes
  • Grapefruit slices for garnish
  • Optional: fresh mint leaves

Instructions

  1. Juice 1 large grapefruit (about 1 cup / 240 ml) and 1 small lemon (about 1 tablespoon / 15 ml). Strain the juice through a fine mesh sieve to remove pulp and seeds.
  2. Place 2-3 fresh rosemary sprigs in a mixing glass. Gently muddle about 8-10 times using a muddler or the back of a wooden spoon to release oils without shredding the leaves.
  3. Add the grapefruit juice, lemon juice, and 2 tablespoons (30 ml) of simple syrup to the muddled rosemary. Stir gently and let sit for 2-3 minutes to infuse.
  4. Fill serving glasses about ยพ full with ice cubes.
  5. Strain the infused grapefruit mixture evenly over the ice in each glass.
  6. Top each glass with ยฝ to ยพ cup (120-180 ml) sparkling water, depending on desired fizz. Stir gently to combine.
  7. Garnish with a thin slice or wedge of grapefruit and a small sprig of fresh rosemary. Serve immediately.

Notes

Use gentle pressure when muddling rosemary to avoid bitterness. Freshly squeezed grapefruit juice is preferred for best flavor. Add sparkling water last and stir gently to keep fizz. The grapefruit-rosemary base can be prepared up to 24 hours ahead and refrigerated; add sparkling water and ice just before serving.
