A light, crisp, and herbal sparkling drink featuring fresh grapefruit juice and rosemary, perfect for any occasion and easy to make in under 10 minutes.

  • 1 cup (240 ml) fresh grapefruit juice
  • 23 fresh rosemary sprigs
  • 1 ยฝ cups (360 ml) sparkling water
  • ยผ cup (60 ml) simple syrup
  • Ice cubes
  • Lemon or lime wedges (optional)
  • Fresh rosemary sprig for garnish

Instructions

  1. Make the simple syrup: Combine ยผ cup (50 g) granulated sugar with ยผ cup (60 ml) water in a small saucepan. Heat over medium, stirring until sugar dissolves completely, about 3-5 minutes. Remove from heat and let cool.
  2. Juice the grapefruit: Cut 2 medium grapefruits in half and use a citrus juicer or reamer to extract about 1 cup (240 ml) of fresh juice. Strain to remove pulp and seeds if desired.
  3. Infuse the rosemary: Add 2-3 fresh rosemary sprigs to the grapefruit juice in a mixing pitcher. Let steep for 5-7 minutes, bruising the rosemary gently to release oils.
  4. Combine ingredients: Remove rosemary sprigs from juice. Add ยผ cup (60 ml) simple syrup and 1 ยฝ cups (360 ml) sparkling water to the pitcher. Stir gently to mix.
  5. Prepare glasses: Fill glasses with ice cubes (optionally frozen with rosemary sprigs). Pour the spritzer mixture over the ice.
  6. Garnish and serve: Add a fresh rosemary sprig and a wedge of lemon or lime to each glass. Serve immediately.

Notes

Do not over-infuse rosemary to avoid bitterness. Roll grapefruits before juicing for more juice. Add sparkling water last to preserve fizz. Freeze ice cubes with rosemary for a decorative touch. Store grapefruit-rosemary infusion and simple syrup separately in fridge for up to 2 days. Add sparkling water just before serving.
