A smoky, sweet summer cocktail featuring grilled peaches, bourbon, fresh mint, and a splash of soda water for a refreshing finish. Perfect for backyard barbecues or relaxing evenings.

  • 2 ripe medium fresh peaches, halved and pitted
  • 3 oz (90 ml) bourbon (mid-shelf brand like Buffalo Trace recommended)
  • 810 fresh mint leaves
  • 1 tbsp honey (can substitute with simple syrup or agave syrup for vegan option)
  • 1 oz (30 ml) fresh lemon juice
  • 3 oz (90 ml) chilled soda water
  • Ice cubes
  • Optional garnish: peach slices and mint sprigs

Instructions

  1. Preheat your grill or grill pan to medium-high heat (about 400ยฐF / 200ยฐC).
  2. Cut peaches in half and remove pits. Brush lightly with oil or cooking spray to prevent sticking.
  3. Place peach halves cut-side down on the grill. Cook for 3-4 minutes until char marks appear and peaches smell caramelized. Flip and grill for another 2 minutes on the skin side. Remove and let cool slightly.
  4. In a mixing glass, add fresh mint leaves and honey. Gently muddle just enough to release the mintโ€™s aroma without bruising.
  5. Pour in 3 oz bourbon and 1 oz fresh lemon juice. Stir gently to mix and dissolve honey completely.
  6. Cut grilled peaches into chunks and add to the mixing glass. Muddle lightly to release juices and infuse the bourbon mixture.
  7. Fill a rocks or old-fashioned glass with ice cubes to the top.
  8. Using a fine mesh or cocktail strainer, pour the bourbon-peach mixture over the ice, leaving behind large bits of mint and peach pulp.
  9. Top off with 3 oz chilled soda water. Stir gently to combine without losing fizz.
  10. Garnish with a peach slice and a sprig of fresh mint. Serve immediately.

Notes

Do not over-muddle the mint to avoid bitterness. Grill peaches just enough to caramelize without burning. Use fresh lemon juice for best flavor. For vegan version, substitute honey with agave syrup. If peaches are out of season, grilled nectarines or pineapple chunks can be used. Prepare the bourbon, lemon, honey, and mint mixture ahead for batch serving but add peaches and soda water just before serving to maintain freshness and fizz.
