A quick and easy summer cocktail featuring smoky grilled peaches, bourbon, fresh mint, and a splash of lemon juice, perfect for warm evenings and backyard gatherings.

  • 2 fresh peaches, halved and pitted
  • 2 ounces bourbon whiskey
  • 68 fresh mint leaves
  • 1 ounce simple syrup
  • 3/4 ounce fresh lemon juice
  • Crushed ice
  • Splash of sparkling water (optional)

Instructions

  1. Preheat your grill or grill pan to medium-high heat (around 400ยฐF or 200ยฐC).
  2. Cut peaches in half and remove pits. Lightly brush the cut sides with a touch of oil to prevent sticking.
  3. Grill peaches cut-side down for 3-4 minutes until caramelized grill marks appear and peaches soften slightly. Flip and grill skin side for another 2 minutes.
  4. Let grilled peaches cool for about 5 minutes.
  5. In a mixing glass, add mint leaves and 2 peach halves cut into chunks. Gently muddle to release oils and juice without pulverizing the mint.
  6. Add bourbon, simple syrup, and lemon juice to the mixing glass. Fill with crushed ice.
  7. Stir well for about 20 seconds until chilled and combined.
  8. Strain mixture into a rocks glass filled with fresh crushed ice, using a fine mesh strainer if desired.
  9. Top with a splash of sparkling water if preferred.
  10. Garnish with a fresh mint sprig and a grilled peach slice on the rim.

Notes

Use firm but ripe peaches for best grilling results. Avoid over-muddling mint to prevent bitterness. Fresh lemon juice is preferred over bottled. Crushed ice keeps the drink cold without diluting it quickly. Simple syrup can be made ahead and stored refrigerated. Substitute bourbon with rye whiskey or spiced rum for variations. If no grill is available, use a grill pan or broiler.
