A crisp and bright sparkling cocktail featuring floral hibiscus tea, dry prosecco, and a subtle herbal infusion from fresh rosemary. Perfect for summer evenings and easy to prepare in under 10 minutes.

  • 3 hibiscus tea bags
  • 2 cups filtered water
  • 3 ounces dry or extra dry prosecco
  • 1 ounce sparkling water
  • ยฝ ounce simple syrup (optional)
  • 1 fresh rosemary sprig
  • 1 lemon or lime wedge

Instructions

  1. Bring 2 cups (480 ml) of filtered water to a boil. Remove from heat and steep 3 hibiscus tea bags for 6-8 minutes depending on desired strength. Remove tea bags and let cool to room temperature, about 20 minutes.
  2. Prepare simple syrup (optional): Combine ยฝ cup sugar and ยฝ cup water in a small saucepan. Heat gently, stirring until sugar dissolves. Let cool.
  3. Chill prosecco and sparkling water before mixing.
  4. Fill a glass halfway with ice cubes. Pour in 3 ounces (90 ml) of cooled hibiscus tea and 3 ounces (90 ml) prosecco. Add 1 ounce (30 ml) sparkling water. Stir gently to combine.
  5. Add ยฝ ounce (15 ml) simple syrup if desired for sweetness. Squeeze in a wedge of lemon or lime and swirl to release juice and oils.
  6. Thread a fresh rosemary sprig onto a skewer or toothpick and place it in or across the glass to infuse aroma.
  7. Serve immediately to enjoy the bubbles at their best.

Notes

Use fresh rosemary for best aroma. Avoid vigorous stirring after adding prosecco to preserve bubbles. Hibiscus tea can be brewed ahead and chilled. For a non-alcoholic version, replace prosecco with sparkling white grape juice or sparkling water. Frozen hibiscus tea ice cubes can keep the drink flavorful without dilution.
