Refreshing Kiwi Lime Sparkler

A quick and easy homemade sparkling drink combining fresh kiwi, lime, and mint for a lively, refreshing beverage perfect for hot days and casual gatherings.

Ingredients

  • 2 ripe kiwis, peeled and chopped
  • 1 large lime, juiced (about 2 tablespoons)
  • About 10 fresh mint leaves, plus extra for garnish
  • 1 to 2 teaspoons sugar or honey (optional, adjust to taste)
  • 1 cup (8 fl oz) cold sparkling water
  • Ice cubes as needed
  • Pinch of sea salt (optional)

Instructions

  1. Peel and chop 2 ripe kiwis into small pieces (about 3 minutes). Place in a blender or tall container if using an immersion blender.
  2. Blend the kiwi until smooth but slightly pulpy (about 1 minute).
  3. Place about 10 fresh mint leaves in a serving pitcher or glass. Gently muddle with a muddler or wooden spoon to release oils without pulverizing (about 30 seconds).
  4. Add the juice of one large lime (about 2 tablespoons) and 1 to 2 teaspoons of sugar or honey to the pitcher. Stir gently to dissolve the sweetener and combine.
  5. Pour the blended kiwi into the pitcher with the muddled mint and lime mixture. Stir well to combine.
  6. Slowly add 1 cup (8 fl oz) of cold sparkling water. Stir gently to preserve the fizz.
  7. Serve over ice cubes, garnished with a sprig of mint and a thin lime wheel if desired.

Notes

Use ripe kiwis for best sweetness and flavor. Muddle mint gently to avoid bitterness. Add sparkling water last and stir gently to keep fizz. Chill ingredients beforehand for a more refreshing drink. Optional pinch of sea salt enhances flavor. For a smoother drink, strain kiwi puree through a fine mesh sieve.
